Well it’s another sunny day in the Highlands of Scotland, and we’re taking advantage of the glorious weather to harvest some more goodies for our freezer. Today it’s the turn of the blueberry bushes … for the last few years we’ve gotten a handful or two, but this year we’re talking bags of gorgeous berries. I’m so excited, and I’ve already had two requests for muffins … 😃🎉
Again I like to freeze our blueberries … It’s so easy. First get rid of any mushy berries and remove the stems. Lay them on a tray (single layer) and pop them in the freezer. That’s it, you don’t even have to rinse them before freezing. When frozen, transfer to a freezer bag, date and label and you’re good to go. Then, just pull out the berries when you need them, rinse and enjoy.
