Some Sunday Baking ...
So my husband and son are coming home today and I’m so excited. 🙃
They’ve been working away on aircraft for the last month or so, only popping home for the odd day or two. This week in particular has seen them working long hours outside in torrential rain and thunderstorms. Not much fun ... So I popped in the kitchen ... this is my small way of letting them know, how much I appreciate their hard work and all they do for us. Can’t wait to see them ... Happy Sunday Xx

To Make ...

12oz caster sugar
12oz soft margarine
12oz self raising flour
2 heaped teaspoons of baking powder.
6 eggs (large).
Just pop all ingredients into a bowl and whisk until well blended. I divide the mixture between two 9 inch round cake tins (greased and floured).
Bake until golden brown and the cake skewer comes out clean when tested. Sorry, I can’t advise temperatures, as I cook on a range. I check mine after 20 mins and go from there.
Allow the cake to cool, turn out, fill with fresh berries, jam ( of your choice) and cream. I use double cream and beat until stiff.
Then sift icing sugar gently over the top.
