Jacket Potato Tuna Mix ... :)

One of our family favourites …
We’re usually quite busy during the day, so I love meals I can pop in the oven and just forget about.
These jacket (baked) potatoes are so easy and the tuna mix can be prepared in advance and popped in the fridge. Here’s my recipe if you’d like to have a go. I’m cooking for 6, so don’t forget to adjust your quantities if needed …

Jacket Potato and Tuna Mix.
-6 large baking potatoes.
- 1 cucumber.
- 1 large red onion.
- 3 sticks of celery.
- 6 small tomatoes.
- 2 sweet peppers.
- 4 tins tuna.
(My tins are 160g each).
- Mayonnaise to taste.
- salt and pepper to taste.
- A small dish of grated cheese.
- 6 small knobs of butter.
- side salad of your choice.

**Wash and bake the potatoes in the oven until soft and golden brown. I bake my potatoes uncovered in the oven, as I like a slightly crispy skin.
**Whilst the potatoes are baking chop the cucumber, celery, tomatoes, peppers and red onions. Pop in a large bowl and set aside.
**Next open / drain the tins of tuna and place in the bowl with the chopped veg.
**Then add as much mayonnaise as you like to the tuna and mix together with the vegetables until well coated.
**Season the mixture with salt and pepper to taste.
**When the potatoes are baked, remove from the oven and place on a plate. Slice nearly in half down the centre, and score each inside piece with a knife. Put a generous knob of butter in the middle of each potato (it should melt quite quickly).
**Next top your potatoes with the tuna mix.
**Serve with a sprinkling and grated cheese and a side salad of your choice. We love watercress with ours and it goes so well with this dish.
