As promised, here’s my new soda bread recipe. It turned out so well and was definitely a hit with my family … It’s so quick and easy to make !!! 😋
For TWO Loaves You’ll need :
50 grams of butter or I used flora light instead.
200 grams of porridge oats.
500 grams of plain flour.
500 grams of strong wholemeal bread flour.
1 tablespoon of poppy seeds.
2 teaspoons of bicarbonate of soda.
2 teaspoons of salt.
1 litre of buttermilk.
- Mix all the dry ingredients together in a bowl and then rub in the butter until you have crumbs.
- Add the buttermilk and mix all of the ingredients together with a spoon … you have to be fairly quick at this stage.
- When the mixture starts to form a dough, use your fingers to VERY GENTLY finish off and mould the dough into a ball.
- Take the dough, divide into two pieces and place on a floured board.
- Now shape both loaves. I find that 8 to 9 inch rounds are a good size. Gently flatten the top with your hands.
-Place each loaf on a floured baking tray and deeply score the tops with a knife. I usually score my loaves into 6 slices.
- Now bake in the oven for about 30-40 minutes at about 200C or gas mark 6. Check after 30 minutes.
- When the loaves are golden brown and the bottoms sound hollow when tapped. They’re ready to come out and cool on a rack. If they don’t sound hollow, return to the oven (upside down) for a few more minutes.
- This bread is best eaten fresh.
We love it hot, straight out of the oven for a yummy breakfast. Serve with butter, your favourite jam and fresh strawberries on the side. So good !!!
Alternatively serve as an accompaniment to soup.
